Ingredients
  1. 1medium (≈130gestimated from: Sweet potato, raw, unprepared [sweetpotato, 5" long]) Sweet Potatoes peeled and cubed
  2. 3/4cups (≈127.5gestimated from: Cereals, corn grits, yellow, regular and quick, enriched, dry [cup]) Grits, Old-fashioned
  3. 4cups (≈948gestimated from: Water, tap, municipal [cup 8 fl oz]) Water
  4. 1tbsp (≈20gestimated from: Syrups, maple [tbsp]) Maple Syrup
  5. 1/4tsp (≈0.5gestimated from: Spices, cumin seed [tsp, whole]) Cumin, ground
  6. 1tsp (≈6gestimated from: Salt, table [tsp]) Salt
  7. 1/2tsp (≈3gestimated from: Salt, table [tsp]) Garlic Salt
  8. 2tbsp (≈28.4gestimated from: Butter, without salt [tbsp]) Butter, Unsalted room temperature
Steps
  1. 1 Boil or steam cubed sweet potatoes until tender.
  2. 2 Roughly mash with a large fork or potato masher. Set aside.
  3. 3 In another pot, bring the four cups of water to a boil. Add the grits, salt and garlic salt and simmer for about 12 minutes, until thick.
  4. 4 Add the maple syrup, mashed sweet potato, butter and cumin. Stir well and continue cooking until desired thick consistency is met. Season with additional salt or garlic salt to taste.
