Ingredients
  1. 1 medium Sweet Potatoes peeled and cubed
  2. 3/4 cups Grits, Old-fashioned
  3. 4 cups Water
  4. 1 tbsp Maple Syrup
  5. 1/4 tsp Cumin, ground
  6. 1 tsp Salt
  7. 1/2 tsp Garlic Salt
  8. 2 tbsp Butter, Unsalted room temperature
Steps
  1. 1 Boil or steam cubed sweet potatoes until tender.
  2. 2 Roughly mash with a large fork or potato masher. Set aside.
  3. 3 In another pot, bring the four cups of water to a boil. Add the grits, salt and garlic salt and simmer for about 12 minutes, until thick.
  4. 4 Add the maple syrup, mashed sweet potato, butter and cumin. Stir well and continue cooking until desired thick consistency is met. Season with additional salt or garlic salt to taste.
