Ingredients
  1. 1medium (≈588gestimated from: Cauliflower, raw [head medium (5-6" dia.)]) Cauliflower cut into florets
  2. 4cloves (≈12gestimated from: Garlic, raw [clove]) Garlic crushed
  3. 1/3cups (≈81.7gestimated from: Milk, buttermilk, fluid, cultured, lowfat [cup]) Buttermilk
  4. 1tbsp (≈14.2gestimated from: Butter, without salt [tbsp]) Butter, Unsalted
Steps
  1. 1 Steam or boil cauliflower and garlic until soft. Drain, add buttermilk, light butter, salt, pepper and purée with a hand blender (or regular blender).
