Ingredients
  1. 8 oz Mushrooms button or cremini; finely sliced
  2. 1/3 cups Olive Oil, Extra-Virgin
  3. 1 tbsp Kosher Salt
  4. 1 clove Garlic minced
  5. 1 medium Lemon zested and juiced
  6. 1 tsp Thyme, Fresh
  7. 1 lb Linguine or other pasta shape
  8. 1/2 cups Parsley, Flat-Leaf chopped
  9. 2 tbsp Parmesan Cheese freshly grated, or to taste
Steps
  1. 1 Slice the mushrooms finely, and put them into a large bowl with the oil, salt, garlic, lemon juice and zest, and gorgeously scented thyme leaves.
  2. 2 Cook the pasta according to the packet instructions and drain loosely retaining some water. Quickly put the pasta into the bowl with the mushroom mixture.
  3. 3 Toss everything together well, and then add the parsley, cheese, and pepper before tossing again. Eat with joy in your heart.
