Ingredients
  1. 1 1/2 cups Quick Rolled Oats
  2. 1 1/4 cups Almond Milk, Unsweetened
  3. 1/2 cups Brown Sugar, Dark
  4. 1 cup Bananas ripe, mashed
  5. 2 large Egg Whites
  6. 2 tbsp Honey
  7. 1 tbsp Canola Oil
  8. 1 tsp Vanilla Extract
  9. 1/2 cups Flour, Whole Wheat
  10. 1 tsp Baking Powder
  11. 1/2 tsp Baking Soda
  12. 1/2 tsp Kosher Salt
  13. 3/4 cups Walnuts chopped
Steps
  1. 1 Preheat the oven to 400F. Line a standard muffin tin with 12 liners and lightly spray the liners with oil.
  2. 2 Pour the oats into a large bowl, add the almond milk and mix well; soak for 30 minutes.
  3. 3 Add the brown sugar, mashed bananas, egg whites, honey, oil, and vaniall to the oats and mix well.
  4. 4 In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Slowly add the flour mixture ingredients to the liquid ingredients and mix with a spatula until just incorporated. Fold in the walnuts. Pour the batter into the prepared muffin tin.
  5. 5 Bake until a toothpick inserted comes out clean, 24 to 28 minutes. Let cool before serving.
