Ingredients
  1. 1 1/2 lb Potatoes variety of your choosing; russets work well
  2. 1/4 cups Olive Oil approximately
  3. 2 tbsp Parsley, Flat-Leaf or fresh herb of your choosing
Steps
  1. 1 Preheat oven to 450 degrees.
  2. 2 Wash and dry potatoes.
  3. 3 Cut potatoes into wedges. Toss with oil, butter, salt, pepper, and whatever else you’d like: melted butter (will smoke in oven), garlic, balsamic, spices, etc.
  4. 4 Roast for 15 minutes. Shake around. Stir. Roast for another 20 minutes.
  5. 5 Take ‘em out. Check the seasoning. Add more if necessary. Sprinkle with herbs. Serve immediately.
