Ingredients
  1. 1cup (≈150gestimated from: Bananas, raw [cup, sliced]) Bananas very ripe, mashed (about 3 small)
  2. 1/2cups (≈100gestimated from: Sugars, granulated [cup]) Sugar
  3. 1/2cups (≈122.5gestimated from: Yogurt, plain, skim milk, 13 grams protein per 8 ounce [cup (8 fl oz)]) Yogurt, Plain, Nonfat
  4. 1/4cups (≈56.4gestimated from: Margarine, regular, hard, soybean (hydrogenated) [tsp]) Margarine melted (or butter)
  5. 2large (≈100gestimated from: Egg, whole, raw, fresh [large]) Egg
  6. 2cups (≈250gestimated from: Wheat flour, white, all-purpose, enriched, bleached [cup]) Flour, All-purpose
  7. 1tsp (≈5gestimated from: Leavening agents, baking powder, low-sodium [tsp]) Baking Powder

Steps
  1. 1 Preheat oven to 350º.
  2. 2 Combine first 5 ingredients in a large bowl; beat at medium speed of an electric mixer until well blended.
  3. 3 Combine flour and next 3 ingredients.
  4. 4 Add flour mixture to banana mixture, add fruit/nuts, stirring just until moistened.
  5. 5 Spoon batter into an 8 1/2 x 4 1/2 x 3-inch loaf pan coated with baking spray with flour.
  6. 6 Bake for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean.
  7. 7 Cool 10 minutes in pan on a wire rack; remove from pan, and cool completely on a wire rack. Bake mini loaves for 35 minutes or muffins for 18 minutes.
