Ingredients
  1. 2 lb Pork Roast excess fat trimmed
  2. 3 cloves Garlic peeled
  3. 1/2 cups Hot Sauce
  4. 3 tbsp Smoked Paprika
  5. 2 tbsp Garlic Powder
  6. 2 tbsp Chili Powder
  7. 1 tbsp Cumin, ground
  8. 2 tsp Cayenne
  9. 1 tbsp Red Pepper Flakes heaping
  10. 1 pinch Salt
  11. 2 medium Onion diced
  12. 1 medium Red Bell Pepper diced
  13. 1 medium Yellow Bell Pepper diced
  14. 28 oz Tomatoes, canned, fire roasted
  15. 14 oz Tomato Sauce
  16. Garnish
  17. 1 medium Avocado sliced
  18. 2 medium Green Onions diced
Steps
  1. 1 Place the pork roast in a crock pot.
  2. 2 Press a knife into the roast in 3 spots and press the peeled garlic cloves into the holes made from the knife.
  3. 3 Pour hot sauce over meat.
  4. 4 Sprinkle the paprika, garlic powder, chili powder, cumin, cayenne pepper, red pepper flakes, and salt on top of the roast.
  5. 5 Place diced onions, peppers, tomatoes and tomatoes sauce on top of the roast.
  6. 6 Cover and cook for 8-10 hours on low.
  7. 7 Garnish with sliced avocado and green onions.
