1/2 lb (680.4glb -> g) Potatoes variety of your choosing; russets work well -
1/4 cups (≈54gestimated from: Oil, olive, salad or cooking [cup]) Olive Oil approximately - 2tbsp (≈7.6gestimated from: Parsley, fresh [tbsp]) Parsley, Flat-Leaf or fresh herb of your choosing
Steps
- 1 Preheat oven to 450 degrees.
- 2 Wash and dry potatoes.
- 3 Cut potatoes into wedges. Toss with oil, butter, salt, pepper, and whatever else you’d like: melted butter (will smoke in oven), garlic, balsamic, spices, etc.
- 4 Roast for 15 minutes. Shake around. Stir. Roast for another 20 minutes.
- 5 Take ‘em out. Check the seasoning. Add more if necessary. Sprinkle with herbs. Serve immediately.
